Cooking with a Family in Balakhani: Baku's Oldest Oil Village
Balakhani sits about 20 km from central Baku and is where Azerbaijan's oil story actually starts — hand-dug wells here predate the industrial derricks by centuries. Today it is a quiet village of stone houses, and the reason to come is a kitchen rather than a monument.
What you cook
The usual set is dolma — vine or cabbage leaves rolled around spiced minced lamb — plov, and something cooked on a sac, the convex iron plate used over an open flame. Bread is often made alongside, which is the part most people underestimate until they try to shape it.
Azerbaijani cooking leans on herbs in volume rather than heat: coriander, dill, tarragon and mint go in by the handful. Sourness comes from pomegranate, sumac or plum rather than vinegar, and that distinction is easier to taste than to describe.
Why Balakhani
The village was one of the earliest oil extraction sites in the world; wells were being dug and the oil traded long before the 19th-century boom. Some of the old stone architecture survives, and an art residence has taken over part of it.
Practically, it is close enough to Baku that the day does not turn into a drive, and far enough that you are eating in a home rather than a restaurant with a demonstration kitchen. The session runs roughly 09:30 to 17:00.
